Rustic Beef Hash




 

Ingredients

  • Leftover pot roast (1 to 2 cups shredded or cubed)
  • 1 large carrot
  • Olive Oil
  • 2 medium diced sweet potatoes
  • 1 medium russet potato
  • 1 large, sweet onion
  • Salt and pepper to taste
  • 1 tablespoon of minced garlic
  • 1 tsp onion powder

Steps

  • Cut up all of the vegetables and toss with olive oil, salt and pepper in a large bowl.
  • Place on a large baking sheet and bake at 400 degrees until slightly tender.
  • Once vegetables are done dice them up in bite size pieces.
  • Heat up a large skillet with a little olive oil and add vegetables.
  • Separate the pot roast from the gravy and set gravy aside.
  • Cut the pot roast in bite size pieces and add to the skillet.
  • Saute for about 10 minutes.
  • Add the leftover gravy from the pot roast and cook until warmed through.

 

My Pot Roast Recipe

One chuck roast

1 packet of brown gravy

Ranch seasoning

1/2 stick butter or margarine

Salt and Pepper

Garlic salt

1 small jar of banana peppers

1 cup water

Place all in slow cooker and cook on low for 8 to 10 hours.
