Rustic Beef Hash
Ingredients
- Leftover pot roast (1 to 2 cups shredded or cubed)
- 1 large carrot
- Olive Oil
- 2 medium diced sweet potatoes
- 1 medium russet potato
- 1 large, sweet onion
- Salt and pepper to taste
- 1 tablespoon of minced garlic
- 1 tsp onion powder
Steps
- Cut up all of the vegetables and toss with olive oil, salt and pepper in a large bowl.
- Place on a large baking sheet and bake at 400 degrees until slightly tender.
- Once vegetables are done dice them up in bite size pieces.
- Heat up a large skillet with a little olive oil and add vegetables.
- Separate the pot roast from the gravy and set gravy aside.
- Cut the pot roast in bite size pieces and add to the skillet.
- Saute for about 10 minutes.
- Add the leftover gravy from the pot roast and cook until warmed through.
My Pot Roast Recipe
One chuck roast
1 packet of brown gravy
Ranch seasoning
1/2 stick butter or margarine
Salt and Pepper
Garlic salt
1 small jar of banana peppers
1 cup water
Place all in slow cooker and cook on low for 8 to 10 hours.
