Sourdough Honey Cornbread
Today I wanted to share this delicious Sourdough Honey Cornbread mix that I came up with. I usually make my Jalapeno Cornbread but wanted a change and something a bit sweeter. I added a bit of honey and some sweet cream corn. It really turned out great, so I wanted to share the recipe here on my blog.
I have always used Jiffy Cornbread mix whenever I make cornbread instead of the bag cornmeal mix. I love how all of the leavening ingredients are already included in the mix for you. I also used a well-fed sourdough starter and canned cream of corn additional sweetness with the honey. I use as much as possible local home-grown honey from the area where I live as you can't beat the taste compared to commercially store bought. However, in a pinch I have used store bought and the cornbread tasted just as good.
Ingredients
1 Box of Jiffy Cornbread Mix
1 room temperature egg
1/3 cup of buttermilk
1/3 cup canned cream of corn
2 tbs butter
2 tablespoons of honey
1/4 cup fed sourdough starter
How to Make Sourdough Honey Cornbread
Place an 8-inch cast iron skillet in the oven with the two tablespoons of butter until oven reaches 425 degrees.
Mix all the other ingredients in a bowl until well combined.
Add the mixture to the heated butter and cook for 25 minutes and the top of the cornbread is golden brown and cooked throughout. Check with a toothpick to make sure completely done on the inside.
