 Sourdough Pizza Crust



We love to eat pizza especially on the weekends when we are busy with things around the house.  Pizza is a quick dinner to make and can be topped with a ton of vegetables to make it a heart healthy as well. I love to take a bag of sweet peppers and saute them with a little olive oil and top our pizza with that. 

Sourdough pizza crust can be a bit tricky to bake to get that perfect crust.  I actually make my pizza in a cast iron skillet and will cook it on the stove a bit and then finish off in the oven.  It took a bit of trial and error before I finally figured this out.  

 

Ingredients

 3 cups of all-purpose flour

 1 cup of warm water

1 tsp kosher salt

1 tablespoon of olive oil

1 cup of fed starter

1 teaspoon of Italian seasoning (opt)

Steps

Mix water and fed starter well in a bowl.

Let sit for 30 minutes.

Add flour, salt, olive oil and seasonings and mix.

Knead a few times on a lightly floured surface.

Form into a ball and placed in a greased bowl.

Cover with a kitchen towel and let rest for one hour.

Form dough into a disk and wrap in plastic wrap.

Place in refrigerator overnight to ferment.

Baking Instructions for Sourdough Pizza Crust

Take dough out of refrigerator and let rest for one hour

Turn the broil on in your oven.

On a lightly flour surface use a rolling pin and roll out the dough into a circular shape.

Place dough in cast iron pan pushing the dough up on the sides to form a crust.

Add sauce and toppings.

Place the pizza under the broil in the oven until the crust is nice and brown and the cheese starts to char but not burn.  

Finishing cooking the crust on a medium heat on your stove.  Check the bottom of the pizza often as it can burn easily.

Tips

If you don't have a cast iron skillet you can use a pizza stone that can withstand high heat.

I used all-purpose flour; however, you can use a combination of wheat and all-purpose.

This recipe can be cut in half to make two personal size pizzas or doubled to make two pizzas.
