 Perfect Sourdough Pancakes



One of my favorite things to make for breakfast for my family is my sourdough pancakes.  It took me some trial and error before I finally got to the perfect sourdough pancake recipe.  These pancakes are not to thick but also not a thin pancake.  

Ingredients

1 1/2 cup of fed sourdough starter

1 tsp soda

1/4 cup plus two tablespoons of all-purpose flour

2 eggs

1/4 cup milk

1 tsp vanilla

1 tablespoon of melted butter or coconut oil

1 tablespoon of maple syrup

1 tablespoon of sugar (I use coconut sugar)

Dash of salt

Steps

Add your fed starter and eggs to a bowl and mix.

Add the vanilla, maple syrup and milk.

Sift together in another bowl the flour and salt.

Once thoroughly mixed sprinkle the teaspoon of soda on top of the batter and let sit five minutes.

Stir in the soda.

Melt a bit of butter in a nonstick pan over medium heat.  

Add one kitchen ladle (1/3 cup) full of pancake mixture to the pan.

With the back of the ladle smooth out the batter in a circular motion.  

Yields 5 pancakes
